Not to be confused with Chile

Or even chiles or chilies (plural of chili pepper – not originating from Chile specifically but from all over the Americas and later cultivated world-wide).

Or the band Red Hot Chili Peppers

“Chili” is most often referring to the delicious and versatile dish, chili con carne (from Spanish origin circa the 1500s meaning chili (peppers) with meat). Official dish of Texas; the supposed victory dish of Cholulan Indians uniting with the Aztecs against the Conquistadors; the cook-offs of fall gatherings and Super Bowl parties; the ultimate hotdog topper; the ever-debated red vs. white concoction.[1] Chili, whatever the spelling, is good grub that every chef or chief or whoever you are should know how to rustle up.

Gather all ingredients:
1 large onion
2 tablespoons olive oil
2lb ground turkey (or beef if that’s your preference)
1/2 teaspoon salt to season meat
3 cloves of garlic
3 cans of kidney beans
1 package of kielbasa sausage
28 ounces tomato sauce
28 ounces diced tomatoes
28 ounces crushed tomatoes

Spices, what sets Chili apart from spaghetti sauce:
1/2 teaspoon salt
1 Tablespoon chili powder
1 teaspoon red pepper flakes
1 Tablespoon of Scorned Woman hot sauce/your favorite hot sauce + 2 Tablespoons diced pickled jalapenos and 1/4 cup of the juice

(The sauce pictured below is a Christmas gift from my dad to Chris, Widow Maker Hot sauce, from the Sauce Shoppe in Virginia Beach. Christmas day was a showdown between Charlie and Chris putting their hot sauces on their quiche. I know, sounds weird right, men eating quiche…I tried a finger swipe of the stuff off the lid and instantly got the hiccups. Terribly hot stuff. So I decided to use it in the chili for New Year’s since I was out of Scorned Woman hot sauce. Just 1 teaspoon of Widow Maker hot sauce in the whole pot still had some grasping for their drinks!)

Chop onions, sausage, and garlic. Don’t sample the onions, Rory found this out the hard way. Gross.
Set aside the sausage and garlic
Sweat the onions in 2 tablespoons olive oil on medium/high heat for a few minutes
Add ground turkey and 1/2 teaspoon salt
Brown and drain

Add in garlic (if you do it earlier it tends to overcook)
Add in sausage
Add in beans
Saute for a few minutes to meld the flavors

Add in spices
Add in tomato products and another 1/2 teaspoon salt
Stir and bring to a simmer
Cover and let simmer for a half hour or as long as two hours on low heat, stirring occasionally.

Top with cheese or sour cream for those who can’t handle the heat!

My favorite is to pair it with Jiffy’s corn bread

    it. I never made it w/sausage, good idea! Love that picture of Rory!

  2. I hate dark red kidney beans. I don’t like the tough skin and it looks like a bowl of roaches to me. Yuck! I think I’ll try a combo of light red kidney beans or maybe white kidney (canalini) beans mixed with black beans… Hmmm brain it working…

    1. I’ve used some white before and it turned out great. I’ve not tried black though. Let me know how it turns out!
