Easy Bean Dinner

I realize this is my second recipe on beans, but what can I say, they are a super food I am willing to support!

Inspired by my earlier bean recipe, but no time to make them, I concocted this crock pot version that came out surprisingly good.

2 cans kidney beans
1 can white northern beans
1 large onion, diced
1 large green pepper (optional), chopped
4 garlic cloves – whole or minced
3 fresh jalapeno peppers, chopped
1 1/2 cups fresh tomatoes, diced
1 small bag of bacon bits
pinch of salt/pepper
1 Tbsp lemon juice
1 Tbsp scorned woman hot sauce
2 cups water

Crock pot on low for 6 hours and can warm for another 6 if needed

Serve over rice or paired with cornbread.
If you prep it all the night before, skip the spices and water until morning when you turn the crock pot on.
